If you try to create a new policy (which I always seem to think is the correct process), you will not see the ISCSI vNIC.

I seem to always forget that when creating a boot policy to boot from ISCSI, you must choose "create a specific boot policy" for the ISCSI vNIC to be displayed as an option.
